Pork and Honeydew Salad

Ingredients

  • 400gms dry fried lean pork, diced
  • 500gms honeydew melon, balled
  • 1/2 cup sliced celery
  • 1/2 cup chopped spring onion
  • 1/2 teaspoon Sharwood’s Tikka Chicken powder – or more to taste!
  • 1 cup low-fat yoghurt
  • Gourmet lettuce selection

Instructions

Lightly spray wok or non-stick pan with cooking spray.

Dry fry cubed pork and allow to cool. Combine Tikka Chicken Powder with yoghurt in a small bowl. Pile gourmet lettuce on four plates, arrange pork, melon balls, celery and spring onions over lettuce, and pour over yoghurt mix.

Garnish with lemon zest and fresh cardamom.

Serves 4.
